Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Add the diced onions and sauté for 3-4 minutes until fragrant and translucent.
  • Incorporate minced garlic and sauté for an additional minute.
  • Introduce the ground beef, breaking it apart and cooking until browned, about 5-7 minutes.
  • Stir in the black beans, diced tomatoes, and taco seasoning, and let simmer for 5 minutes.

Cooking Tortellini

  • In a separate pot, cook the cheese tortellini according to the package instructions, then drain.

Assembly

  • Preheat your oven to 350°F (175°C).
  • Mix the cooked tortellini with the beef mixture.
  • Spread half of the enchilada sauce in a baking dish and layer the tortellini mixture on top.
  • Pour the remaining sauce over and top with shredded cheddar cheese.
  • Cover with foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until cheese is melted and bubbling.

Notes

For extra flavor, consider adding fresh cilantro or green onions on top before serving. Experiment with different types of cheese for variations.
