For the chicken

  • 4 pieces boneless, skinless chicken breasts Forms the juicy pocket for the filling.

Preparation

  • Preheat your oven to 350 degrees.
  • Heat the olive oil in a large ovenproof skillet over medium heat.
  • Add the diced onions and bell peppers, cooking until they're soft, about 5 minutes.
  • Season with kosher salt and black pepper, then remove the skillet from heat.
  • Let the mixture cool slightly.
  • Using a sharp paring knife, carefully create a pocket in each chicken breast.
  • Generously stuff each breast with the cooled vegetable mixture, topping it off with shredded cheddar.
  • Season the stuffed chicken with additional Cajun spice, salt, and pepper to taste.

Cooking

  • Return the chicken to the skillet and bake for 25 minutes, or until the chicken is thoroughly cooked.

Notes

Consider marinating the chicken in Cajun seasoning and olive oil for at least 30 minutes before preparation. Can substitute cheese or add cooked rice or quinoa to the stuffing.
