Preparation

  • Preheat your oven to 350 degrees Fahrenheit.
  • Prepare a 17-inch by 11-inch rimmed baking sheet with parchment paper.
  • In a medium microwave-safe bowl, combine the granulated sugar, chopped semisweet chocolate, and water. Microwave in 20-second increments, stirring in between until smooth and glossy.
  • Stir in the neutral oil, unsweetened cocoa powder, vanilla extract, and kosher salt until well-blended.
  • Allow the mixture to cool slightly, then stir in the egg whites until fully combined and velvety.
  • Gently fold in the all-purpose flour and baking powder until just combined; do not overmix.
  • Spread the batter evenly onto the prepared baking sheet, creating a thin layer.
  • Sprinkle the top with semisweet chocolate chips and half of the crushed candy canes.

Baking

  • Bake for about 25 to 30 minutes, rotating the pan every 10 minutes, until the center feels firm to the touch.
  • Allow the brownie brittle to cool completely before slicing.

Finishing Touch

  • Melt the white chocolate and drizzle it over the cooled brownie brittle, topping with the remaining crushed candy canes.
