Preparation

  • Preheat the oven to 325°F (160°C). Spray a 9 x 9-inch baking dish with cooking spray and line with parchment paper.
  • In a food processor, combine graham crackers, egg white, melted butter, sugar, and salt. Process until fine crumbs form, then press evenly into the bottom of the baking pan.
  • In a large bowl, beat cream cheese until light and fluffy. Gradually add sugar, egg yolk, and one large egg, mixing well. Add vanilla extract and blend until smooth. Pour over the crust.
  • In a separate bowl, mash blueberries (thaw if using frozen) and fold in blueberry jam. Dollop over the cream cheese layer.
  • To make the crumble, whisk together flour, dark brown sugar, melted butter, lemon zest, and kosher salt until soft crumbs form. Sprinkle over the blueberry layer.
  • Bake for about 30 minutes or until edges are firm but center is slightly jiggly. Cool for 30 minutes, then refrigerate for at least 2 hours.
  • Once chilled, lift the bars out using the parchment paper. Cut into squares and serve.

Notes

For the best texture, ensure cream cheese is at room temperature. Chilling is essential for proper setting. Consider adding chopped nuts to the crumble topping for extra crunch.
