Preparation

  • Preheat your oven to 400°F (200°C).
  • In a baking dish, place the cherry tomatoes, drizzle with olive oil, and sprinkle with minced garlic and thyme. Season with salt and pepper and toss gently.
  • Slice the halloumi into half-inch thick pieces and arrange them among the tomatoes in the baking dish.

Cooking

  • Bake in the preheated oven for about 20–25 minutes, watching closely. Broil for the final 2–3 minutes for extra crispiness.
  • Remove from the oven, garnish with fresh herbs, and serve warm with crusty bread.

Notes

This dish serves well as an appetizer or a side dish. It can also be prepared in a cast-iron skillet or oven-safe ceramic dish. Ensure the oven is preheated to avoid uneven cooking and avoid overcrowding the baking dish.
