Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and generously spray a 9-by-4 loaf pan with cooking spray.
  • In a medium mixing bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, ground nutmeg, and kosher salt.
  • In a larger mixing bowl, combine the melted butter, brown sugar, and granulated sugar until light and smooth.
  • Add in the egg and whisk until fully combined. Incorporate the cooled apple cider and vanilla extract, mixing well.
  • Gradually add half of the dry ingredients to the wet mixture, folding gently. Then add the whole milk, followed by the remaining dry ingredients.
  • Mix until just combined, then transfer the batter into the prepared loaf pan.

Baking

  • Bake for 55-60 minutes, or until a toothpick comes out with moist crumbs.
  • Allow to cool in the pan for 15 minutes before inverting onto a wire rack to cool completely.

Coating

  • Mix the granulated sugar and ground cinnamon on a plate.
  • Brush the warm cake with melted butter and roll it in the cinnamon-sugar mixture.
  • Allow the cake to cool completely before slicing.

Notes

Use fresh apple cider for the best taste, measure ingredients accurately, and avoid overmixing for a tender crumb. Store covered at room temperature for up to three days, or refrigerate for about a week. Can be frozen for up to three months.
