  • 4 cups apple cider Supplies a sweet, tangy backdrop to the brisket.
  • 1.5 cups low-sodium beef or chicken broth Adds savory depth to the braising liquid.
  • 6 sprigs thyme Infuses the brisket with herbal notes.
  • 2 leaves bay leaves Imparts a subtle spice.
  • 3/4 tsp cayenne pepper Adds a warm kick.

Seasoning

Instructions
 

Preparation

  • Preheat your oven to 325 degrees Fahrenheit.
  • Pat the brisket dry and season with Kosher salt and freshly ground black pepper.
  • In a large Dutch oven, heat 2 tablespoons of neutral oil over medium-high heat. Sear the brisket until browned on all sides.
  • Transfer the brisket to a baking dish and let it rest.
  • Add the halved baby potatoes, cooking until they start to soften. Then add the carrots and shallots, seasoning with salt and pepper.

Cooking

  • Return the brisket to the pot, pour in the apple cider and broth, and add thyme, bay leaves, and cayenne pepper.
  • Bring to a boil, cover the pot, and bake in the oven for 2 ½ to 3 hours until the brisket is fork-tender.

Serving

  • Discard the thyme and bay leaves. Shred the brisket and serve alongside the vegetables and juices.

Notes

Let the brisket rest after cooking for juicier results. Braising takes time; don't rush the process. For variations, substitute chicken thighs or add more vegetables.
