Pie Crust

Fruit Filling

  • 2 lbs. fresh strawberries, quartered Juicy, bright, and sweet; they add a refreshing flavor.
  • 1/4 cup plus 3 Tbsp. granulated sugar Enhances the natural sweetness of the fruit.
  • 1/4 cup plus 2 Tbsp. cornstarch This thickening agent ensures a sturdy filling.
  • 1 1/2 tsp. finely grated lemon zest Adds brightness to the flavor profile.
  • 1 Tbsp. plus 2 tsp. fresh lemon juice Adds a tart kick that balances sweetness.
  • 1 pinch kosher salt Enhances all flavors.
  • 2 cups fresh blueberries or 1 lb. frozen, thawed, and drained Sweet and bursting with flavor.

Finishing Touches

  • 1 large egg For the egg wash to give the pie a golden finish.
  • 1 Tbsp. heavy cream Enhances the richness of the crust.

Instructions
 

Preparation

  • Preheat your oven to 400°F.
  • Roll out 2 batches of pie dough into a large quarter sheet pan, trim and crimp the edges, and refrigerate the crust.
  • Take the remaining dough, roll it out and cut out fun shapes for decoration, then refrigerate.

Cooking the Filling

  • In a saucepan over medium heat, combine the quartered strawberries, sugar, cornstarch, lemon zest, lemon juice, and a pinch of salt. Cook until thickened, then cool.
  • Repeat the process with the blueberries until thickened and cool.

Assembling the Pie

  • Brush the bottom of the pie crust with egg wash.
  • Layer the blueberry mixture into the crust first, followed by the strawberry mixture, and decorate with the fun shapes.
  • Brush the edges of the pie with more egg wash.

Baking

  • Bake at 400°F for 20 minutes, then reduce temperature to 350°F and bake for an additional 25-30 minutes until golden brown.
  • Allow the pie to cool for at least one hour before serving.

Notes

For best results, use ripe and in-season fruits. Consider adding spices like cinnamon or nutmeg for extra flavor. Store-bought pie crust can be used for convenience.
